The Benefits of Juicing

Juicing is a process that separates the juice from fruits and vegetables from the pulp.  The removal of fiber enables the body to absorb large amounts of vitamins, minerals, food enzymes, and antioxidants with minimal effort.  The energy and enzymes that are not needed for digestion and assimilation can then be used to cleanse, rebuild, and repair.  Enzymes are the life force of food, responsible for every chemical reaction that occurs in every cell of your body.  They are destroyed in foods that have been cooked or processed.  We have a finite amount of enzymes and when they begin to run out, we start to see the signs of aging and increase our chances for disease. Juices are best consumed upon rising when the body is in cleansing mode, but if this is not convenient for you find a time that works best for your lifestyle.  Start out with 6 ounces per day and gradually build up to 16 ounces.  In time, you will begin to experience the many benefits of juicing including, increased energy levels, weight loss, stronger immune system, and healthier skin, hair and nails.

Lemon Poppy Seed Avocado

Lemon Poppy Seed Avocado

This recipe is one of my favorite meals.  Just one tablespoon of poppy seeds contains 13% of the RDA for calcium and is also a good source of iron and manganese.

1/2 avocado
Juice of 1/4 lemon
1 tablespoon poppy seeds
salt and pepper to taste

Directions

In the shell cut avocado into slices and place on a plate.  Squeeze lemon juice over the slices. Sprinkle with poppy seeds, pepper and sea salt.

Antioxidant Rich

  • 2 bananas
  • 1-2 small apples (seeds removed)
  • 1/4 of a cored pineapple
  • 1/4 cup blueberries (fresh or frozen)
  • 1/4 cup goji berries (soaked in water for a few hours to soften)
  • handful carrot tops
  • 1/2 bunch dandelion greens
  • 3 cups water
  • dash of cinnamon
  • pinch of cayenne

Blend all ingredients in Vitamix. Makes approximately 1.5 Liters. I drink this throughout the day. Although it is best to blend and then drink, green smoothies can be kept in the fridge for up to 3 days.
